Best Cake with Apricot

  • 2 eggs
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • ½ cup nuts  (probably chopped walnuts or pecans)
  • 1 tsp vanilla
  • 1 jar/can of apricot cake and pastry filling or about a cup of apricot jam

Mix all ingredients by hand.  Pour into greased 9 x 13 pan, bake at 350° for 45 minutes.


  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 1 1/3 cups powdered sugar
  • 1 tps vanilla

Beat frosting ingredients until combined and fluffy.  Spread over warm cake.
