CAKE:
- 2 sticks butter or margarine (“oleo”)
- 3 cups sifted flour
- Milk
- 3 tsp. baking powder
- ¼ tsp. baking soda
- 1 tsp vanilla
- ½ cup sugar
- 6 egg yolks
FILLING:
- 2 large cans crushed pineapple (20 oz each)
- ½ c sugar
- ½ pineapple can of water
- 7 Tbsp cornstarch
- TOPPING:
- 6 egg whites
- 12 tbsp sugar
- Chopped nuts
Heat oven to 350.
Combine filling ingredients in saucepan over medium heat. Cook until combined and thickened. Allow to cool.
Pour filling over pastry in pan. Bake about 30 minutes and remove from oven.
Beat egg whites with sugar until meringue forms. Spread gently over the pineapple. Brown in oven. Sprinkle with chopped nuts, if desired.
