Maine Blueberry Muffins

In memory of Ginny Falcsik and in honor of Dennis Falcsik


  • 2 cups flour
  • 3 tsp baking powder
  • 1 1/4 cups sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup vegetable oil OR applesauce
  • 1/2 cup milk
  • 2 cups blueberries (fresh or frozen)
  • Coarse sugar (optional)

Mix flour, baking powder, sugar, and salt. Add eggs, oil (or applesauce) and milk. Stir just until ingredients are mixed together.

Spoon in blueberries and pour into muffin tin. Top with coarse sugar if desired.

Bake at 400 for 25-30 minutes. Makes one dozen yummy muffins!
