In honor of Lil Tucker
Joyce writes, “In her later years, Mom was known for baking Sun Drop Cakes. It was the ‘funeral cake,’ so if someone passed she took this cake to the family. She also baked them for friends and anyone who needed a smile.”
- 1 box lemon cake mix
- 1 small package lemon instant pudding mix
- 1 (12-oz) can Sun Drop
- 3 eggs
- 3/4 cup oil
Preheat oven to 350. Combine lemon cake mix, lemon pudding, Sun Drop, eggs and oil in a medium bowl.
Beat with an electric mixer until well blended. Pour into greased and floured bundt pan. Bake for about 45 minutes, or until done. Take out of the pan while warm and pour glaze (below) over it.
- 1 cup powdered sugar
- 2 Tbsp water
- 1 tsp vanilla
Yield: 10 – 12 servings
